Premium cave-aged semi-hard Swiss cheese, made with pasteurized cow’s milk, natural black-brown rind, cave-aged in Kaltbach. Melt-in-your-mouth with a delightful caramelized butter flavour that lingers on the palate.Aged in a 22-million year old sandstone cave in Switzerland where cavemasters have been refining cheese for more than 60 years. The cave lies at the foot of the Santenberg Hilltops, formed during the last Ice Age when sand was carried down by a glacier. There is a small tranquil river that runs through the cave which inspired the name; Kaltbach means ‘‘cold brook’’ and it’s what allows for a constant level of humidity, perfect for ripening. Kaltbach Creamy is aged for approximately 4 - 5 months and the milk is sourced from Zentralschweiz, which is one of the seven largest regions of Switzerland. The milk is pasteurized with cream added and then finished using the smear-ripened process. Beverage Pairings - A tart Gose Berliner Weisse beer, a bright Chardonnay, Chenin Blanc or Riesling or Iced Green Tea.Food Pairings - Pair with blackberries, pineapple and honey, shave into a salad with lemon vinaigrette and pomegranate seeds or grate into polenta.
