This cheese has 30% less fat than our standard Cheddar but retains all of the flavour of a mature Cheddar.Strength - 3.30% less fat than our standard Cheddar but with all the flavour.Our cheese sometimes has white crystals on the surface and within the cheese itself. This is Calcium Lactate - it occurs naturally and is indicative of older, stronger cheeses. It can also give the cheese a crunchy texture.
